Potatoes Au Gratin
( with variations)
Basic potatoes Au Gratin
4 russet potatoes, sliced into 1/4 inch slices
1 onion, sliced into rings
2 cups milk
1 1/2 cups shredded Cheddar cheese
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon sea salt
Pepper to taste
Preparation
Preheat oven to 400 degrees F.
Butter a 1 quart casserole dish.
Layer 1/2 of the potatoes into bottom of the prepared casserole dish.
Top with the onion slices, and add the remaining potatoes.
Season with salt and pepper to taste.
In a medium-size saucepan, melt butter over medium heat.
Mix in the flour and salt, and stir constantly with a whisk for one minute.
Stir in milk.
Cook until mixture has thickened.
Stir in 1 cup cheese all at once, and continue stirring until melted, about 30 to 60 seconds.
Pour cheese mixture over the potatoes
Spread the 1/2 c of remaining cheese over the top, cover the dish with aluminum foil.
Bake 1 hour in the preheated oven.
Take aluminum foil off and bake 30 more minutes
Variations:
* Sliced Smoked Sausage fried 5 minutes with the onions and placed on the potatoes
* Add 1 lb. ground beef (browned)
* 1 can condensed cream of Mushroom, cream of Chicken or Cheddar cheese soup and 1/2 to 3/4c. milk to replace 2 cups of milk in the recipe
* 12 oz. sour cream and 3/4 c milk to replace 2 cups of milk in the recipe
* Add 1 c. ham, cooked and diced
* Use Cheese Whiz in place of the cheddar
* Add 1/2 c. coarsely chopped celery or broccoli
* 1 tbsp. prepared mustard
* Add a clove of crushed garlic
* Garnish with parsley and/or paprika
