Cashew Brittle

Ingredients:
1 1/2 cups sugar
1/4 t sea salt
1 t baking soda
1/2 cup water
1 cup light corn syrup
2 t vanilla
2 T real butter
3 cups cashews (roasted)
Preparation
Combine the sugar, water, corn syrup, and salt in a saucepan and bring to a boil over medium heat.
Boil, stirring occasionally, for about 15 minutes until the hard crack stage, 300-310F (150-155C) on a candy thermometer.
If you don't have a candy thermometer, drizzle a little thread shaped candy in a cold glass of water, pull it out and bend it. If it breaks it's ready. If it bends it's not.
Remove from the heat and add the remaining ingredients, stirring after each addition. Nuts last.
Pour immediately onto a large greased baking sheet and, using two forks, lift and stretch the mixture to form a 12-inch (30 cm) square.
Cool completely before breaking into smaller pieces.
Store in a container.
Makes about 1 1/2 lbs.
This is great to put in the candy dish for christmas or anyother holiday.
