(White Onion Sauce)

Ingredients:
2 medium onions (chopped)
3 Tbs all-purpose flour
5 Tbs butter
1 1/2 cups vegetable stock (you can use chicken, beef, or fish also)
Salt and pepper to taste
Preparation
Melt 2 tablespoons of butter in a frying pan and saute the onions at medium heat until transparent but not brown. This should take about 5 minutes.
Melt the remaining butter in a sauce pan over low to medium heat.
Stir in the flour and cook for 3 minutes. Be careful not to brown the flour as in a rue.
Add the stock and bring to a boil, stirring continually.
Add the onions and cook on low heat for 20 to 30 minutes.
Add salt and pepper to taste
Puree in an blender
Makes 1 1/2 cups
Use over meats or vegetables
