Sauerkraut Salad

Try this delicious salad
Ingredients:
2 lb Homemade or Silver Floss Sauerkraut
1 cup Celery (diced fine)
1/2 cup Green pepper (diced fine)
1/2 cup Onion (diced fine)
1/2 cup Sugar or enough Stevia or Artifical Sweetener to equal said amount
1/2 cup White Vinegar
1/4 cup Olive Oil *(light)
Preparation:
Mix sugar and vinegar in a salad bowl
Add onion, green pepper and the celery and soak for 15 minutes to an hour.
Rinse the kraut well with cold water (if you don't like it sour then rinse it 2 or 3 times) and drain by pressing as much liquid out of the saurkraut as possible
Mix sauerkraut and remaining ingredients and refridgerate at least 2 hours
24 hours is better if you can wait
* Light olive oil isn't less calories but it has a light olive oil taste and doesn't over power the recipe
